Ingredients
The following ingredients have 4 Servings
- 3 lbs russet potatoes, (peeled and cut into 1" cubes)
- 3 tbsp unsalted butter
- 1/2 cup milk ((I used 2%))
- 1/2 cup sour cream
- 5 cloves garlic, (minced)
- 1 1/4 tsp ground chipotle chile pepper
- 1 tsp salt
- 3/4 tsp ground black pepper
- 2 cups shredded cheddar cheese, (your preferred variety)
Instruction
- Peel and cube potatoes and add them to a pot of salted boiling water. Boil for 20-25 minutes, or until the potatoes are fork-tender and easily 'mashable' with a fork.
- Drain water and add the potatoes back to the pot. Mash potatoes.
- Add butter, milk, sour cream, and garlic and stir until the butter melts and everything is combined.
- Add chipotle chile pepper, salt, and pepper and stir to combine.
- Add shredded cheese and stir until melted and smooth. Take a taste and add additional seasonings or cheese to your liking.
