Ingredients
The following ingredients have 4 Servings
- 2 tbsp. grass-fed butter or ghee
- 3-4 garlic cloves (chopped)
- 6 cups spinach (roughly chopped)
- A squeeze of lime juice
- Salt and pepper to taste
- 4 large brown mushrooms
- 2-3 tbsp. pine nuts
Instruction
- Preheat oven to 390 F.
- In a large pan, melt the butter with the garlic and sauté for a few seconds.
- Add the spinach and allow it to wilt.
- Add the lime juice and season to taste.
- Place the mushrooms in an oven-proof dish and season with salt and pepper.
- Add a generous spoonful of the spinach mixture to each mushroom and top with the pine nuts.
- Place in the oven and bake for 15-20 minutes until the mushrooms are cooked through and the pine nuts are golden.
- Serve immediately.
