Ingredients

The following ingredients have 4 Servings
  • 1 butternut squash (seeded, peeled and cut into cubes)
  • 4 garlic cloves (minced)
  • 2 tbsp. fresh parsley (minced)
  • 2 tbsp. fresh rosemary (minced)
  • 1 tbsp. fresh thyme (minced)
  • 1/4 cup olive oil
  • Sea salt and freshly ground black pepper

Instruction

  • Preheat oven to 425 F.
  • In a bowl, combine all the ingredients, and season to taste.
  • Gently toss everything until well coated.
  • Place the squash on a parchment lined, or lightly oiled baking sheet.
  • Roast in the oven for 35 to 40 minutes, turning at the halfway point.
  • Adjust seasoning and serve topped with more fresh herbs, if desired.
