Ingredients
The following ingredients have 4 Servings
- 1 butternut squash (seeded, peeled and cut into cubes)
- 4 garlic cloves (minced)
- 2 tbsp. fresh parsley (minced)
- 2 tbsp. fresh rosemary (minced)
- 1 tbsp. fresh thyme (minced)
- 1/4 cup olive oil
- Sea salt and freshly ground black pepper
Instruction
- Preheat oven to 425 F.
- In a bowl, combine all the ingredients, and season to taste.
- Gently toss everything until well coated.
- Place the squash on a parchment lined, or lightly oiled baking sheet.
- Roast in the oven for 35 to 40 minutes, turning at the halfway point.
- Adjust seasoning and serve topped with more fresh herbs, if desired.
