Ingredients

The following ingredients have 6 Servings
  • About 500 gr = 17 oz Smithfield garlic and herb pork loin filet
  • 1 large can whole tomatoes (with sauce)
  • 10 mashed tomatoes (fresh or canned)
  • Handful of olives
  • Salt and pepper to taste
  • Water
  • 3 garlic cloves (optional)
  • Sesame seeds to garnish (optional)

Instruction

  • Cut filet as preferred (I cut slices off, about 1 finger thick and then cut those in half)
  • Roast all with a tablespoon of oil for about 2 minutes, in a pan/crock pot large enough to fit all meat
  • Add water to slightly cover all meat
  • Salt to taste (be aware olives might be salty too so skip salt if that's the case)
  • Cover with lid and leave to boil for 10 minutes
  • Add garlic, can of whole tomatoes and mashed tomatoes
  • Let it simmer on low heat for 10 more minutes, stirring occasionally.
  • Add olives and simmer for 10 more minutes.
