Ingredients
The following ingredients have 6 Servings
- About 500 gr = 17 oz Smithfield garlic and herb pork loin filet
- 1 large can whole tomatoes (with sauce)
- 10 mashed tomatoes (fresh or canned)
- Handful of olives
- Salt and pepper to taste
- Water
- 3 garlic cloves (optional)
- Sesame seeds to garnish (optional)
Instruction
- Cut filet as preferred (I cut slices off, about 1 finger thick and then cut those in half)
- Roast all with a tablespoon of oil for about 2 minutes, in a pan/crock pot large enough to fit all meat
- Add water to slightly cover all meat
- Salt to taste (be aware olives might be salty too so skip salt if that's the case)
- Cover with lid and leave to boil for 10 minutes
- Add garlic, can of whole tomatoes and mashed tomatoes
- Let it simmer on low heat for 10 more minutes, stirring occasionally.
- Add olives and simmer for 10 more minutes.
