Ingredients

The following ingredients have 4 Servings
  • 1 large tomato (sliced into 1/2" chunks)
  • 1-2 cups grape tomatoes
  • 1 cup diced bell peppers
  • 1 whole cucumber, diced
  • 2 Tbsp diced red onion
  • ½ cup diced fresh mozzarella chunks
  • ¼ cup fresh basil, minced
  • ½ cup olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp sugar
  • ⅔ cup red wine vinegar

Instruction

  • Wash all produce. Dice/ chop/ mince to your heart's content. Feel free to add other vegetables! More favorites include zucchini, bell peppers, artichoke hearts, mushrooms, broccoli, cauliflower, etc.
  • Toss salad together with vinaigrette and serve.
