Ingredients

The following ingredients have 4 Servings
  • 2 lb. Extra Lean Ground Beef
  • 2 cloves Garlic, (minced)
  • 1 c. Portobello Mushrooms, (large dice)
  • 1 c. Zucchini, (large dice)
  • 1 c Yellow Squash (large dice)
  • ½ c Red Onions (chopped)
  • 1- 16(ounce) can Black Beans
  • 2 c. Tomatoes, (diced)
  • 2 c Beef Broth
  • 2 tsp. Chili Powder, (or more as desired)

Instruction

  • In a Dutch oven or large pot, brown the ground beef; then add the garlic, mushrooms, zucchini, squash and onions and stir until the vegetables start to soften; approximately 3-4 minutes.
  • Add the beans, tomatoes, beef broth and chili powder; stir well.
  • Cover the pot halfway, reduce heat and simmer for 1 ½-2 hours.
