Ingredients
The following ingredients have 4 Servings
- 2 red peppers
- 4 Tbsps olive oil
- 1 tsp English mustard
- 1 pinch sugar
- 2 Tbsps Cider vinegar
- 8 cups baby Spinach
- 2 cups canned chickpeas (drained and rinsed)
- 1 Avocado (peeled, stone removed and chopped)
- 2 large tomatoes (deseeded and chopped)
- 8 green Olives (pitted and chopped)
- 3 scallions (finely chopped)
- 2 Tbsps parsley (chopped)
Instruction
- Put the peppers under a hot grill and grill on all sides until the skin has blackened. Put in a large bowl, cover with plastic wrap and set aside.
- Mix the oil, mustard, sugar and vinegar and season with salt and pepper.
- When the peppers are cool enough to handle remove the skins and discard the seeds. Chop the flesh.
- Gently mix the peppers with the rest of the ingredients, toss with the dressing and serve.
