Ingredients

The following ingredients have 4 Servings
  • 2 red peppers
  • 4 Tbsps olive oil
  • 1 tsp English mustard
  • 1 pinch sugar
  • 2 Tbsps Cider vinegar
  • 8 cups baby Spinach
  • 2 cups canned chickpeas (drained and rinsed)
  • 1 Avocado (peeled, stone removed and chopped)
  • 2 large tomatoes (deseeded and chopped)
  • 8 green Olives (pitted and chopped)
  • 3 scallions (finely chopped)
  • 2 Tbsps parsley (chopped)

Instruction

  • Put the peppers under a hot grill and grill on all sides until the skin has blackened. Put in a large bowl, cover with plastic wrap and set aside.
  • Mix the oil, mustard, sugar and vinegar and season with salt and pepper.
  • When the peppers are cool enough to handle remove the skins and discard the seeds. Chop the flesh.
  • Gently mix the peppers with the rest of the ingredients, toss with the dressing and serve.
