Ingredients
The following ingredients have 4 Servings
- 15 oz Garbanzo Beans (drained & rinsed)
- 15 oz Black Beans (drained & rinsed)
- 1 Roma Tomato (diced)
- 1 Tbsp Red Onion (finely diced)
- 1 Tsp Canola Oil
- 1 Tsp Apple Cider Vinegar
- 1 Tsp Extra Virgin Olive Oil
- 1 Tsp Lemon Pepper Seasoning
- 1/2 Tsp Salt
- 1/2 Tsp Garlic Powder
- 1/8 Tsp Cayenne Pepper
- 1 Tbsp Fresh Mint Leaves (chopped)
- 1 Tbsp Fresh Italian Parsley (chopped)
Instruction
- In a mixing bowl, combine the rinsed beans, tomato and red onion. Stir till well combined.
- Pour the canola oil, apple cider vinegar and olive oil over the bean mixture and stir.
- Add the lemon pepper, salt, garlic powder and cayenne and toss until well combined.
- Fold in the fresh parsley and fresh mint and stir.
- While not necessary, I recommend letting the salad sit in the refrigerator covered for about 1 hour to allow all the flavors to meld.
