Ingredients

The following ingredients have 4 Servings
  • 300 g basmati rice
  • 1 tsp turmeric
  • 1 tbs olive oil
  • 1 red pepper
  • 1 red onion
  • 150 g frozen peas
  • 200 g cooked prawns
  • 80 g raisins
  • 150 g seedless grapes
  • 200 g tin sweetcorn
  • 1 spring onion
  • 2 tbs soy sauce

Instruction

  • Add the rice and the turmeric to a large pan of boiling water and cook as per the packet instructions.
  • While the rice is cooking, finely chop the onion and red pepper. Heat the oil in a large pan, and gently fry the onion and pepper until soft.
  • Add the peas to the pan and gently fry until the peas have defrosted and warmed through. Take off the heat until the rice has finished cooking.
  • Drain the rice and add it to the pan with the rest of the ingredients.  Stir well to mix together, then season with salt and pepper to taste.
  • Serve warm or cool down quickly and store in the fridge until needed.
