Ingredients

The following ingredients have 4 Servings
  • 2/3 cup salted butter (softened and at room temp)
  • 1/4 cup confectioners sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 12 ounces cream cheese (softened and at room temp)
  • 1/2 cup confectioner's sugar
  • 1 teaspoon vanilla
  • 2-3 kiwi fruit (sliced into circles)
  • 1/2 cup blueberries (washed and dried )
  • 6-10 large strawberries (washed, hulled and sliced)
  • 1 small can pineapple chunks (drained well or fresh pineapple)
  • 1 large mango (peeled and diced )

Instruction

  • Preheat your oven to 350 °F. Lightly grease a 14 inch pizza pan and set aside.
  • In a medium bowl, mix together the butter, two types of sugars, egg, and vanilla extract until combined. Mix in the flour and mix until a dough forms. Press into the bottom of the prepared pizza pan.
  • Bake in the preheated oven for 10-15 minutes, until golden brown. Remove and cool in the pan.
  • In a large bowl with a hand mixer, or using a stand mixer, beat the filling ingredients together. Tastes test, and add more confectioner's sugar if desired. You can make this layer as sweet or as tangy as you like!
  • Once the crust has cooled, spread the cream cheese mixture over top. Chill for 30 minutes. While this is chilling prepare your fruit.
  • To prepare the fruit, once you have sliced it, lay it on paper towels to absorb any excess moisture, This will help keep the pizza from getting too soggy!
  • Once the cream cheese has chilled, arrange the fruit in the pattern of your choice over the top. Slice and serve!
