Ingredients

The following ingredients have 8 Servings
  • 1 1/2 lbs ground beef
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 tablespoons taco seasoning
  • 1 1/4 cups water
  • 1 cup salsa style tomatoes
  • 1 can (15 ounce) kidney beans drained and rinsed
  • 4-5 cups Frito chips (7-8 ounces)
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 1 cup sliced grape tomatoes (optional)
  • 2/3 cup sliced black olives (optional)
  • 2 green onions chopped (optional)
  • sour cream (optional)

Instruction

  • Preheat oven to 350 degrees. Spray 9×13 inch casserole dish with nonstick cooking spray.
  • In a large skillet over medium heat brown ground beef.  When ground beef is almost browned add onion and cook for 2-3 minutes.  Add garlic and cook for 1 minute; stirring constantly.  Drain excess grease.  Stir in taco seasoning and water.  Simmer for 10 minutes over low heat. Add salsa style tomatoes and kidney beans; stir to combine. Spoon into prepared baking dish.
  • Top with Frito chips, shredded cheddar and shredded Monterey Jack.
  • Bake for 30 minutes or until cheese is fully melted. Top with tomatoes, black olives, green onions and sour cream if desired.
