  • 2 cups water
  • 2 tablespoons vegetable oil (divided)
  • ¼ cup minced white onion
  • 1 tablespoon minced garlic
  • ½ cup diced carrots (¼-inch dice)
  • 1 teaspoon sesame oil
  • 2 large eggs (beaten)
  • ½ cup peas (frozen, defrosted)
  • 1 tablespoon soy sauce
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon white pepper
  • 2 tablespoons green onions (thinly sliced)
