Ingredients
The following ingredients have 4 Servings
- 2 large green tomatoes
- 1 cup flour
- 1 cup buttermilk
- 1/2 cup Panko bread crumbs
- 1/2 cup cornmeal
- 1 teaspoon seasoned salt (divided)
- Oil (for frying)
- 1/3 cup mayonnaise
- 1 tablespoon mustard
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon vinegar
Instruction
- Heat 1 inch of oil in a large skillet over medium heat to 375 degrees.
- Wash and slice the tomatoes into 1/4 inch slices. Pat dry.
- Add the flour to a small bowl and stir in 1/2 teaspoon of seasoned salt.
- Add the buttermilk to a shallow dish.
- Add the Panko, cornmeal, and remaining seasoned salt to a third dish and stir to combine.
- Dredge the tomato slices in the flour, then the buttermilk, and then the bread crumbs. Shake off excess.
- Fry for 2 minutes per side, or until golden brown.
- Place on a paper towel lined plate to drain.
- To make the dipping sauce, whisk together the remaining ingredients.
