Ingredients

The following ingredients have 3 Servings
  • 1 large zucchini
  • 1/2 cup feta crumbles
  • 1/4 cup chopped parsley
  • 2 scallions (sliced)
  • 2 tbsp good quality olive oil
  • 1 tbsp good quality aged balsamic vinegar
  • salt and pepper
  • 2.5 oz arugula

Instruction

  • Grate the zucchini with a mandolin, and combine with the feta, parsley, scallions, olive oil, and balsamic in a large bowl. Season to taste with a pinch or so of salt and pepper.
  • Add the arugula and toss to combine. Serve and enjoy!
