Ingredients

The following ingredients have 7 Servings
  • 3/4 cup quinoa (cooked according to package directions and cooled)
  • 3 cups broccoli florets (chopped into small pieces)
  • 4 green onions (sliced)
  • 1 cup red cabbage (chopped)
  • 1 yellow pepper (diced)
  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 3/4 teaspoon sea salt
  • 1/3 teaspoon pepper
  • 1 Tablespoon sugar

Instruction

  • In a large bowl, mix the olive oil, vinegar, sugar, salt, and pepper. Add the vegetables and stir.
  • Add the cooled quinoa, and stir again until everything is coated with dressing. Season with more salt and pepper if desired.
  • Serve immediately, or refrigerate until ready to eat.
