Ingredients
The following ingredients have 4 Servings
- butter (for the raclette pans)
- 6 ripe tomatoes (small)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 bunch parsley (finely chopped)
- 2 Tbsps blanched almonds
- 1 Tbsp olive oil
- 1 clove garlic cloves
- 2 Tbsps Vegetable broth
- 2 Tbsps freshly grated Parmesan
- 1 slice cooked ham (diced)
Instruction
- Preheat the raclette grill and grease the raclette pans with butter.
- Wash and halve the tomatoes; place in the prepared raclette pans cut side up. Season with salt and pepper.
- In the bowl of a food processor, combine the parsley, almonds, olive oil, garlic, and vegetable broth. Pulse 2 or 3 times. Stir in Parmesan cheese and diced ham.
- Spread the mixture evenly over each tomato. Place raclette pans under the preheated raclette grill. Cook until golden brown and bubbly. Serve with baguette.
