Ingredients

The following ingredients have 4 Servings
  • butter (for the raclette pans)
  • 6 ripe tomatoes (small)
  • salt (to taste)
  • freshly ground Black pepper (to taste)
  • 1 bunch parsley (finely chopped)
  • 2 Tbsps blanched almonds
  • 1 Tbsp olive oil
  • 1 clove garlic cloves
  • 2 Tbsps Vegetable broth
  • 2 Tbsps freshly grated Parmesan
  • 1 slice cooked ham (diced)

Instruction

  • Preheat the raclette grill and grease the raclette pans with butter.
  • Wash and halve the tomatoes; place in the prepared raclette pans cut side up. Season with salt and pepper.
  • In the bowl of a food processor, combine the parsley, almonds, olive oil, garlic, and vegetable broth. Pulse 2 or 3 times. Stir in Parmesan cheese and diced ham.
  • Spread the mixture evenly over each tomato. Place raclette pans under the preheated raclette grill. Cook until golden brown and bubbly. Serve with baguette.
