Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon butter
  • 1 tablespoon light olive oil
  • 2 onions, finely chopped
  • 2 cloves garlic, crushed
  • ¼ cup (15 g) finely chopped fresh basil
  • 1 kg ripe tomatoes, chopped
  • 1 teaspoon soft brown sugar
  • 1 litre chicken stock
  • 85 g packet instant noodles, broken up
  • torn fresh basil, to serve

Instruction

  • <p><strong>1.</strong> Melt the butter and olive oil in a large saucepan, add the onion, garlic and basil and gently cook for 5 minutes, without browning.</p> <p><strong>2.</strong> Add the tomato, brown sugar and half the chicken stock. Season with salt and cracked black pepper, then bring to the boil and cook for 10 minutes. Transfer to a blender or food processor and blend until smooth.</p> <p><strong>3.</strong> Return to the saucepan, add the remaining chicken stock and 2 cups (500 ml) water and bring to the boil. Add the noodles and cook, stirring occasionally, for 2 minutes. Season to taste with salt and pepper. Garnish with fresh basil, then serve with crusty bread.</p>
