Ingredients
The following ingredients have 4 Servings
- 5 cups spring lettuce mix
- 2 peaches (thinly sliced)
- avocado (thinly sliced)
- ½ red onion (thinly sliced)
- 2 corn on the cob* ((cooked and cut off the cob))
- 1/2 cup feta cheese
- 1 cup mayonnaise
- 1/3 cup honey
- 1/3 cup whole milk**
- 1/4 cup apple cider vinegar
- 1-2 tablespoons sugar*** (optional, to taste)
- 1 tablespoon minced shallot
- 1 tablespoon poppy seeds
- 1 teaspoon minced garlic
- ½ teaspoon ground mustard
- ½ teaspoon salt
Instruction
- Place the spring lettuce mix in a large bowl or platter.
- Top with the sliced peaches and avocado.
- Then sprinkle the top with the corn, sliced onion and feta cheese.
- In a small bowl or a mason jar, mix all of the dressing ingredients. Whisk or shake to mix.
- Pour dressing over the entire salad, or individual servings. Then serve immediately.
- This dressing gets runny as it sits, so make it close to the time you want to serve it. If you need less, then make 1/2 recipe.
- Store any leftovers in the fridge. This salad isn't great for leftovers, but I have eaten it later the same day.
