Ingredients

The following ingredients have 4 Servings
  • 5 cups spring lettuce mix
  • 2 peaches (thinly sliced)
  • avocado (thinly sliced)
  • ½ red onion (thinly sliced)
  • 2 corn on the cob* ((cooked and cut off the cob))
  • 1/2 cup feta cheese
  • 1 cup mayonnaise
  • 1/3 cup honey
  • 1/3 cup whole milk**
  • 1/4 cup apple cider vinegar
  • 1-2 tablespoons sugar*** (optional, to taste)
  • 1 tablespoon minced shallot
  • 1 tablespoon poppy seeds
  • 1 teaspoon minced garlic
  • ½ teaspoon ground mustard
  • ½ teaspoon salt

Instruction

  • Place the spring lettuce mix in a large bowl or platter.
  • Top with the sliced peaches and avocado.
  • Then sprinkle the top with the corn, sliced onion and feta cheese.
  • In a small bowl or a mason jar, mix all of the dressing ingredients. Whisk or shake to mix.
  • Pour dressing over the entire salad, or individual servings. Then serve immediately.
  • This dressing gets runny as it sits, so make it close to the time you want to serve it. If you need less, then make 1/2 recipe.
  • Store any leftovers in the fridge. This salad isn't great for leftovers, but I have eaten it later the same day.
