Ingredients

The following ingredients have 8 Servings
  • 4 cups frozen corn (or fresh)
  • 1 green bell pepper (diced)
  • 1 red bell pepper (diced)
  • ½ red onion (finely diced)
  • 4 ounces diced green chilis (1 can, drained)
  • 1½ Tablespoons butter
  • 1 Tablespoon chili powder
  • 1 Tablespoon cumin
  • ½ teaspoon salt
  • ½ teaspoon cilantro

Instruction

  • Combine all the ingredients in a large saucepan.
  • Heat over medium heat, cover with lid, and let cook for about 10-12 minutes or until vegetables are done cooking.
