  • 2 tbsp (30 ml) cognac
  • 4 cups (1 litre) chicken broth
  • 4 cups (1 litre) beef broth
  • 1 tbsp light toasted flour
  • 1 pinch nutmeg
  • 2 cups (200 g) Gruyère cheese, grated
  • 12 slices baguette bread, about ½ inch (1 cm) thick, toasted
