Ingredients

The following ingredients have 8 Servings
  • 1 cup Angel Hair Pasta ( (or Vermicelli))
  • 1/2 Onion ((diced))
  • 1/2 Bell Pepper ((diced))
  • 2 cloves Garlic ((minced))
  • 4 Mushrooms ((diced))
  • 1 cup Baby Spinach ((chopped))
  • 2 cups Rice ((at least 1/4 cup wild rice))
  • 3 cups Low Sodium Vegetable Broth ( )
  • 1/4 cup Soy Sauce ((low sodium))
  • 1/4 cup Almond Slivers ((optional))

Instruction

  • Break up pasta into small inch long pieces
  • Lightly toast pasta and almonds (if using) in a skillet until slightly browned
  • Add to large pasta pot with a lid
  • Chop all veggies and add to pot
  • Rinse and drain rice
  • Lightly toast rice in same skillet, over med-low heat until dry and toasty
  • Add rice to pot
  • Add veggie broth and soy sauce
  • Bring to a boil and then reduce heat to simmer
  • Simmer 20 minutes
  • Remove from heat and carefully remove lid
  • Drape clean kitchen towel over pan and replace lid
  • Let rest 5-10 minutes
  • Remove lid and towel and fluff with fork
  • Season to taste
