Ingredients
The following ingredients have 8 Servings
- 2 oranges large
- 5 eggs large
- 250 g raw sugar
- 250 g ground almonds
- 1 tsp baking powder
- 2 tsp orange liqueur optional
- 1/2 cup icing sugar *to decorate
Instruction
- Place oranges in saucepan and boil for two hours, topping up water as necessary.
- Allow to cool, then cut into pieces, place in a blender and blend until smooth (pips and peel can be included).
- Preheat oven to 200C and line a 20cm round cake tin.
- Beat eggs and sugar together.
- Mix in baking powder, stir in the pureed oranges and gently fold in almond meal.
- Mix in orange liqueur if using, then pour mixture into tin.
- Bake for 55 minutes, or until knife inserted in centre comes out clean. Allow cake to cool in pan before removing.
- Dust with icing sugar prior to serving.
