Ingredients

The following ingredients have 8 Servings
  • 2 oranges large
  • 5 eggs large
  • 250 g raw sugar
  • 250 g ground almonds
  • 1 tsp baking powder
  • 2 tsp orange liqueur optional
  • 1/2 cup icing sugar *to decorate

Instruction

  • Place oranges in saucepan and boil for two hours, topping up water as necessary.
  • Allow to cool, then cut into pieces, place in a blender and blend until smooth (pips and peel can be included).
  • Preheat oven to 200C and line a 20cm round cake tin.
  • Beat eggs and sugar together.
  • Mix in baking powder, stir in the pureed oranges and gently fold in almond meal.
  • Mix in orange liqueur if using, then pour mixture into tin.
  • Bake for 55 minutes, or until knife inserted in centre comes out clean. Allow cake to cool in pan before removing.
  • Dust with icing sugar prior to serving.
