Ingredients
The following ingredients have 4 Servings
- 3/4 cup creamy or crunchy peanut butter
- 1/4 cup butter (or 1/4 cup applesauce, softened)
- 2/3 cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 & 1/3 cups quick-cooking oats or {GF} quick-cooking oats
- 1/2 teaspoon baking soda
- 1/2 tsp baking powder
- 1 generous pinch of salt
- 1/2 cup semisweet chocolate chips
- 1/2 cup M&M's
- 1/2 cup additional add-ins like nuts, candies, raisins, etc. ((I used more M&M's and chocolate chips.)
Instruction
- Preheat oven to 350°.
- In a large bowl, cream peanut butter, butter and sugars until well blended and smooth and then beat in eggs and vanilla.
- Add in the baking soda, baking powder, oats and salt and mix together. Will be on the runny side.
- Stir in chocolate chips, m&ms and whatever add-ins you want.
- Use a large cookie - 1/4 cup scoop or drop by heaping tablespoonfuls 6 large cookies per baking sheet lining with parchment paper.
- Bake 12-14 minutes or until edges are browned. Let sit on baking sheets for 5 minutes before removing. Remove from pans with spatula to wire racks to cool. Store in airtight containers.
- These freeze well too!
