Ingredients

The following ingredients have 8 Servings
  • 2 duck breasts or 3 cups chopped cooked duck meat
  • 4 cups of chopped vegetables.  I used: 1 1/2 leek stalks
  • 2 medium carrots
  • 3 medium celery stalks
  • 1/2 yellow onion
  • 4 Tbsp duck fat (or ghee or olive oil)
  • salt and pepper to taste
  • 1 egg
  • 1/2 cup orange juice
  • 1 1/2 cups duck broth (or chicken or vegetable broth)
  • fresh sage
  • fresh rosemary
  • 3 Tbsp cassava flour
  • 1/4 cup potato starch
  • 3/4 cup cassava flour
  • 1/2 cup olive oil
  • 1/4 tsp ground rosemary (I used a mortar and pestle, or you can use a spice grinder)
  • 1/4 cup filtered water
  • 1/4 tsp salt
