Ingredients

The following ingredients have 4 Servings
  • 2 avocados (mashed)
  • 2 Granny Smith apples (grated or diced)
  • 1/2 small onion (finely minced)
  • 2 jalapeno peppers (seeded and finely diced)
  • 2 Tbsp fresh cilantro (chopped )
  • 2 Tbsp fresh lime juice
  • Kosher salt and pepper
  • 1 Tbsp olive oil
  • 4 Tilapia fillets (4 oz each)
  • 4 cups baby arugula
  • 1 corn tortillas

Instruction

  • Preheat your oven to 375 degrees.
  • To make the Green Apple Guacamole, combine the mashed avocados, apples, jalapenos, cilantro, lime juice and 1/2 tsp of salt in a small bowl. Set aside.
  • Lightly brush olive oil on both sides of the corn tortilla and cut into thin strips. Place on a baking sheet and lightly sprinkle with salt. Bake for about 9-10 minutes until crisp and golden brown. Remove from the oven and set aside.
  • Lightly season the fish on both sides with salt and pepper. To grill your fish inside, heat a grill pan that has been lightly brushed with olive oil over medium-high heat. Add your fish and cook for approximately 4 minutes. Using a spatula carefully turn your fish over and cook for 3-4 minutes more, or until the fish is done and flakes easily with a fork.
  • You can also grill the fish outside, but use a fish basket, or be sure to oil the cooking grates. Tilapia is delicate and falls apart easily.
  • To assemble, add approximately 1 cup of arugula to a bowl, top with 1/4 of the Green Apple Guacamole, and add one grilled fish fillet. Top with a few of the tortilla strips. Repeat with the remaining ingredients. Enjoy!
