Ingredients

The following ingredients have 4 Servings
  • 16.25 oz. Betty Crocker White SuperMoist Cake Mix {1 box}
  • 2 Egg Whites
  • ½ cup Melted Butter, or Canola Oil, or Vegetable Oil
  • 1 Blue Food Coloring or Blue Wilton Icing Gel
  • 4 packages Strawberry or Cherry Pop Rocks

Instruction

  • Combine cake mix, egg whites, and oil in large mixing bowl, and beat well.
  • Stir in drops of Blue Food Coloring or I used Blue Wilton Icing Gel… mix well until you get your desired shade of blue dough.
  • Chill dough in refrigerator for 45 minutes – 1 hour.
  • Drop onto ungreased non-stick cookie sheet in rounded balls.
  • Bake for approx. 8 – 9 minutes {or until done} at 350 degrees.
  • Cool on cooling racks, and once cool it’s time to frost!
  • Frost cookies using your favorite homemade or store bought tub of Cream Cheese Frosting, then sprinkle on Pop Rocks.
  • Serve immediately and ENJOY!! {the pop rocks will lose their effectiveness if these are made ahead, so add frosting and pop rocks right before serving.}
  • Recipe makes approx. 18 – 24 cookies, depending on size.
