Ingredients

The following ingredients have 4 Servings
  • 1 eggplant, (peeled and diced)
  • 1 cup canned chickpeas, (rinsed and patted dry)
  • 1 small onion, (sliced)
  • 2 tsp extra-virgin olive oil
  • Generous pinch of dried oregano
  • 3 tbsp tahini
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • Pinch kosher salt, (or fine sea salt)
  • Freshly ground black pepper
  • 1 ball Roman-Style Pizza Dough ((half a batch), or store-bought pizza dough)
  • ¾ cup shredded mozzarella cheese
  • ⅓ cup crumbled feta cheese
  • 1 tbsp za’atar
  • Fleur de sel, (or sea salt flakes)
  • Freshly ground black pepper
  • Fresh thyme leaves

Instruction

  • Position a rack in the lower third of the oven. Place a pizza stone on the rack and preheat the oven to 500°F (260°C). Preheat for 45 to 60 minutes to allow the stone to absorb as much heat as possible.
