Ingredients
The following ingredients have 4 Servings
- 1 eggplant, (peeled and diced)
- 1 cup canned chickpeas, (rinsed and patted dry)
- 1 small onion, (sliced)
- 2 tsp extra-virgin olive oil
- Generous pinch of dried oregano
- 3 tbsp tahini
- 2 tbsp extra-virgin olive oil
- 1 tbsp freshly squeezed lemon juice
- Pinch kosher salt, (or fine sea salt)
- Freshly ground black pepper
- 1 ball Roman-Style Pizza Dough ((half a batch), or store-bought pizza dough)
- ¾ cup shredded mozzarella cheese
- ⅓ cup crumbled feta cheese
- 1 tbsp za’atar
- Fleur de sel, (or sea salt flakes)
- Freshly ground black pepper
- Fresh thyme leaves
Instruction
- Position a rack in the lower third of the oven. Place a pizza stone on the rack and preheat the oven to 500°F (260°C). Preheat for 45 to 60 minutes to allow the stone to absorb as much heat as possible.
