Ingredients

The following ingredients have 4 Servings
  • 5.333 cups baking potatoes (cut into wedges)
  • 2 red peppers (cut into strips)
  • 2 Red onions (sliced)
  • 4 garlic cloves
  • 4 Tbsps olive oil
  • 4 sprigs thyme

Instruction

  • Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
  • Mix the oil with the potatoes and season with salt and ground black pepper. Place on a cookie sheet lined with waxed paper and bake for approx. 15 minutes.
  • Add the pepper, onions, garlic and thyme to the potatoes and bake for a further 20-25 minutes. Season again with salt and ground black pepper and serve.
