Ingredients
The following ingredients have 4 Servings
- 5.333 cups baking potatoes (cut into wedges)
- 2 red peppers (cut into strips)
- 2 Red onions (sliced)
- 4 garlic cloves
- 4 Tbsps olive oil
- 4 sprigs thyme
Instruction
- Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
- Mix the oil with the potatoes and season with salt and ground black pepper. Place on a cookie sheet lined with waxed paper and bake for approx. 15 minutes.
- Add the pepper, onions, garlic and thyme to the potatoes and bake for a further 20-25 minutes. Season again with salt and ground black pepper and serve.
