Ingredients

The following ingredients have 6 Servings
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup extra-virgin olive oil
  • 1/2 poblano pepper, seeded and finely chopped
  • 3 tablespoons chopped cilantro (optional)
  • 1/2 teaspoon fine sea salt
  • 8 cups bite-size pieces mixed lettuces, such as red leaf, green leaf, or butter lettuce
  • 2 cups thinly sliced jicama sticks, (from about 1/2 medium jicama)
  • 2 carrots, cut into thin matchsticks
  • 3 oranges, peeled and cut into bite-size pieces
  • 1 yellow bell pepper, cored, seeded, and cut into thin strips
  • 1 red bell pepper, cored, seeded, and cut into thin strips

Instruction

  • Stir together orange juice and lime juice in a medium bowl, then whisk in oil until well blended. 
  • Add poblano, cilantro (if using), and salt. Set aside.
  • In a large serving bowl, combine lettuces, jicama, carrots, oranges and red and yellow bell peppers.
  • Add orange juice mixture and toss gently to coat. Serve immediately.
