Ingredients
The following ingredients have 6 Servings
- 1/2 cup orange juice
- 1/4 cup lime juice
- 1/4 cup extra-virgin olive oil
- 1/2 poblano pepper, seeded and finely chopped
- 3 tablespoons chopped cilantro (optional)
- 1/2 teaspoon fine sea salt
- 8 cups bite-size pieces mixed lettuces, such as red leaf, green leaf, or butter lettuce
- 2 cups thinly sliced jicama sticks, (from about 1/2 medium jicama)
- 2 carrots, cut into thin matchsticks
- 3 oranges, peeled and cut into bite-size pieces
- 1 yellow bell pepper, cored, seeded, and cut into thin strips
- 1 red bell pepper, cored, seeded, and cut into thin strips
Instruction
- Stir together orange juice and lime juice in a medium bowl, then whisk in oil until well blended.
- Add poblano, cilantro (if using), and salt. Set aside.
- In a large serving bowl, combine lettuces, jicama, carrots, oranges and red and yellow bell peppers.
- Add orange juice mixture and toss gently to coat. Serve immediately.
