Ingredients
The following ingredients have 8 Servings
- 2 fennel bulbs, thinly sliced
- 1/2 sweet onion, thinly sliced
- 1 large apple, cored and thinly sliced
- 2 cups baby arugula
- 1/4 cup walnuts, toasted and chopped
- 1 lemon, juiced (about 2 tablespoons)
- 2 tablespoons apple cider vinegar
- 1/3 cup olive oil
- 1 teaspoon Dijon mustard
- Salt & pepper, to taste
Instruction
- In a small bowl, whisk the dressing ingredients together until smooth.
- Combine salad ingredients in a large bowl and mix in the dressing.
- Before serving, adjust seasoning with salt & pepper in needed.
