Ingredients

The following ingredients have 8 Servings
  • 2 fennel bulbs, thinly sliced
  • 1/2 sweet onion, thinly sliced
  • 1 large apple, cored and thinly sliced
  • 2 cups baby arugula
  • 1/4 cup walnuts, toasted and chopped
  • 1 lemon, juiced (about 2 tablespoons)
  • 2 tablespoons apple cider vinegar
  • 1/3 cup olive oil
  • 1 teaspoon Dijon mustard
  • Salt & pepper, to taste

Instruction

  • In a small bowl, whisk the dressing ingredients together until smooth.
  • Combine salad ingredients in a large bowl and mix in the dressing.
  • Before serving, adjust seasoning with salt & pepper in needed.
