Ingredients

The following ingredients have 2 Servings
  • 1 large sweet potato, peeled and cut into thin fries
  • olive oil
  • 2 feather steaks
  • ½ a small bunch flat-leaf parsley, finely chopped
  • a small handful oregano leaves, chopped
  • 1 red chilli, small finely chopped
  • ½ clove garlic, chopped
  • 1 tsp smoked paprika
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar

Instruction

  • Heat the oven to 190C/fan 170C/gas 5. Toss the fries with olive oil and season. Spread out on a tray and cook until golden and crisp, about 20-25 minutes.
  • Mix together the chimichurri ingredients and season.
  • Heat a griddle or heavy frying pan to high. Oil and season the steak then cook for 2 minutes on each side. Leave to rest for 5 minutes. Serve the steak with the fries and chimichurri.
