Ingredients

The following ingredients have 2 Servings
  • 2 cups Pinto Beans ((dry))
  • 1/2 Red Onion
  • 1/2 Red Bell Pepper
  • 1 can Chopped Green Chiles ((7oz))
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • 1/2 tsp Ground Cumin
  • 1/4 tsp Salt

Instruction

  • Soak beans overnight with enough water to cover
  • The next day, drain and rinse beans well and add more water to cover 4" above beans.
  • Bring to a boil then reduce heat to a simmer.
  • Cover and simmer 3-4 hrs or until extremely tender.
  • Add more water as needed to prevent scorching.
  • Drain and set aside.
  • In a large skillet, saute veggies in a few Tbs of water until softened
  • Add 1 to 1 1/2 cups of cooked beans and the spices, stir well to mix
  • Mash with potato masher or use a blender to create a smooth paste
  • Return bean mixture to pot and add remaining whole beans.
  • Stir well to blend and serve.
