Ingredients

The following ingredients have 4 Servings
  • 1 cup quinoa
  • 2 cups apple cider
  • 1 cup pumpkin puree
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 cup dried cranberries
  • 1 medium apple (chopped)
  • 3 tbs maple syrup (or to taste)

Instruction

  • Rinse the uncooked quinoa in a fine-mesh strainer, then place it in a medium pot. Add the apple cider to the pot, cover, and bring to a boil. Turn the heat down to medium-low, and simmer for about 15 minutes, or until the quinoa is tender but still chewy.
  • Remove the pot from the stove and stir in the remaining ingredients. The cranberries and apples can be stirred into the mixture or served on top. Serve warm.
