Ingredients
The following ingredients have 4 Servings
- 2 bags boil in the bag basmati rice (we used Tilda branded because it doesn't clump together at all (125g/1 cup))
- 1 large onion (brown or red, finely chopped)
- 5 mushrooms (finely sliced)
- 60 g peas
- 60 g sweetcorn
- 1 red pepper (deseeded and finely chopped)
- 1 yellow pepper (deseeded and finely chopped)
- 2 tbsp dark soy sauce
- 1 tbsp oyster sauce (optional)
- 2 eggs (made into a thick omelette and chopped)
- 2 chicken breasts (cooked and diced)
- low calorie cooking spray
Instruction
- Cook the rice according to packet instructions & allow to cool. If you drain the rice and then pour a kettle of boiling water over it the rice will not stick together as much
- Mist your wok or frying pan with low calorie cooking spray
- Over a medium heat add the onions and peppers, then cook for a few minutes
- Add the peas, sweetcorn and mushrooms and cook until they just start to colour
- Stir in the soy sauce and oyster sauce and allow to cook for another couple of minutes
- Add the egg and chicken pieces, mix well
- Stir in the cooked rice and allow to cook, stirring continuously, until it is piping hot
- Stir in some more soy sauce if you want, and serve
