The following ingredients have 4 Servings
  • 1 lb black beans (dried)
  • 10 cups water
  • 1 bay leaf
  • 2 cloves garlic (peeled)
  • 1/2 onion (white)
  • red pepper flakes (optional)
  • salt (to taste, 2-3 tsp at the end of cooking)
  • 3/4 cup rice, brown (dry)
  • 2 bell pepper (sliced)
  • 1 onion (sliced)
  • 1 tbsp olive oil
  • 1 1/2 tsp taco seasoning
  • 2 cups black beans
  • 2 avocado
  • 1 lime
  • salt and pepper (to taste)
  • salsa (or fresh pico de gallo, sour cream or spicy cilantro cashew cream cheese)
