Ingredients

The following ingredients have 12 Servings
  • 1 tbsp olive oil
  • 1 cup onions (diced)
  • ½ cup bell peppers (diced)
  • 4 cloves garlic (minced)
  • 1 lb ground chicken
  • 1 lb ground pork
  • ½ cup breadcrumbs
  • ½ tsp cumin
  • ½ tsp chili powder
  • ½ tsp paprika
  • ½ tsp sea salt
  • 2 large eggs
  • 2 tsp hot sauce
  • 1 cup pepper jack cheese (shredded)
  • 12 King’s Hawaiian Jalapeno Rolls
  • guacamole
  • hot sauce

Instruction

  • Preheat the oven to 400°F.
  • Add the olive oil to a large skillet over medium high heat.
  • Add the onions, bell peppers and garlic, saute 4-5 minutes then remove from the heat and set aside.
  • In a large bowl, combine the ground chicken, ground pork, breadcrumbs, cumin, chili powder, paprika, salt, eggs, hot sauce and cooked bell peppers and onions.
  • Form into 12 large meatballs and place on a baking sheet.
  • Place in the oven for 20 minutes.
  • Remove from the oven, top the meatballs with the pepper jack cheese and place back in the oven for 2-3 minutes.
  • Slice the King’s Hawaiian Jalapeno Rolls in half and place on a baking sheet and into the oven for 3-4 minutes to lightly toast.
  • Remove from the oven and place a meatball on the bottom of each roll, then top with guacamole and a drizzle of hot sauce, if you ‘d like, then place the top of the roll on the meatball.
