Ingredients
The following ingredients have 12 Servings
- 1 tbsp olive oil
- 1 cup onions (diced)
- ½ cup bell peppers (diced)
- 4 cloves garlic (minced)
- 1 lb ground chicken
- 1 lb ground pork
- ½ cup breadcrumbs
- ½ tsp cumin
- ½ tsp chili powder
- ½ tsp paprika
- ½ tsp sea salt
- 2 large eggs
- 2 tsp hot sauce
- 1 cup pepper jack cheese (shredded)
- 12 King’s Hawaiian Jalapeno Rolls
- guacamole
- hot sauce
Instruction
- Preheat the oven to 400°F.
- Add the olive oil to a large skillet over medium high heat.
- Add the onions, bell peppers and garlic, saute 4-5 minutes then remove from the heat and set aside.
- In a large bowl, combine the ground chicken, ground pork, breadcrumbs, cumin, chili powder, paprika, salt, eggs, hot sauce and cooked bell peppers and onions.
- Form into 12 large meatballs and place on a baking sheet.
- Place in the oven for 20 minutes.
- Remove from the oven, top the meatballs with the pepper jack cheese and place back in the oven for 2-3 minutes.
- Slice the King’s Hawaiian Jalapeno Rolls in half and place on a baking sheet and into the oven for 3-4 minutes to lightly toast.
- Remove from the oven and place a meatball on the bottom of each roll, then top with guacamole and a drizzle of hot sauce, if you ‘d like, then place the top of the roll on the meatball.
