Ingredients

The following ingredients have 4 Servings
  • 600 ml cream
  • 1 1/2 cup sugar
  • 6 egg separated
  • 3 x 250 g fresh strawberries
  • 300 g frozen mixed berries

Instruction

  • Slice strawberries and place in a saucepan.
  • Cook on a medium heat until all of the strawberries have dissolved to create a sauce.
  • Set aside for later.
  • In a large bowl beat the egg whites with an electric with 1 cup of sugar until they form stiff peaks.
  • Spoon the meringue onto a baking tray and bake on low heat until hard on the outside.
  • Once cooked leave to cool down. Crush into pieces.
  • Place the frozen berries in a bowl and sprinkle with sugar. Defrost in the microwave until no longer frozen. Set aside.
  • In another mixing bowl whip the cream with the remaining sugar using an electric mixer.
  • In a large bowl place a spoonful of whipped cream, a spoonful of berries and some crushed meringue.
  • Repeat layering until all the ingredients are used.
  • With a spoon, carefully fold the layers through each other.
  • To serve, spoon the mixture onto a plate and pour over strawberry sauce.
