- 5 green onions, cut into chunks
- 1 cup (250 ml) celery leaves
- 1 small bunch blessed thistle
- 1 Hungarian pepper, seeded and chopped
- Habanero pepper, seeded and chopped, to taste
- 4 cloves garlic, peeled
- 1/4 cup (60 ml) thyme, fresh or dried
- 2 Caribbean bay leaves, fresh or dried
- 3 tablespoons (45 ml) white vinegar
- 1/2 cup (125 ml) water
- Salt and pepper
- 1 fresh turkey, about 9 to 11 lbs (4 to 5 kg)
- 1 lemon or lime, cut into wedges
- 1/2 cup (125 ml) olive oil
