Ingredients
The following ingredients have 4 Servings
- 2/3 cup shredded coconut flakes, unsweetened
- 1/4 cup flaxseed meal
- 1/4 cup wheat germ
- 3/4 cup whole rolled oats
- 3/4 cup smooth peanut butter, melted
- 1/3 cup agave nectar
- 2 tbsp. goji berries, soaked in water for 15 minutes, if needed
- 2 tbsp. dried blueberries
- 1 tbsp. pumpkin seeds
- 1 tbsp. sunflower seeds
- 1 tbsp. chia seeds
- 1 pinch ground Himalayan sea salt (*optional)
Instruction
- In a small skillet over medium heat, toast coconut flakes until golden. Remove from the heat and let cool.
- Place flaxseed meal in a spice grinder and process until ground.
- In a large bowl, combine oats, toasted coconut, flaxseed meal, wheat germ, peanut butter, agave nectar, goji berries, blueberries, pumpkin seeds, sunflower seeds, chia seeds and sea salt; stir well (*see footnote). Transfer to the refrigerator for 30 minutes to chill.
- When ready to roll, wet hands lightly so the mixture doesn't stick and form small balls to about 1 1/2-inch diameter.
