Ingredients
The following ingredients have 4 Servings
- 1¼ cup sugar
- 1 cup butter, (softened)
- 2 large eggs
- 2 teaspoons peppermint extract ((can be substituted with vanilla extract))
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 2½ cups all purpose flour
- ½ teaspoon salt
- 1 cup candy sprinkles
- 1 cup mini chocolate chips
Instruction
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
- In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy.
- Add the eggs and beat into the mixture.
- Next, beat in the peppermint extract.
- Add the flour, baking soda, baking powder, and salt. On low speed, beat the dry ingredients into the butter and egg mixture.
- Next, stir in 1/2 cup of the candy sprinkles and all of the mini chocolate chips.
- Use a small cookie scoop to portion the cookie dough into 1 1/2 tablespoon sized mounds. Gently roll the tops of the cookie dough mounds into the remaining sprinkles.
- Place onto the prepared baking sheet and bake for exactly 15 minutes. Remove the cookies from the oven and allow to cool for a few minutes before transferring to a wire cooling rack to finish cooling.
