Ingredients

The following ingredients have 4 Servings
  • 1¼ cup sugar
  • 1 cup butter, (softened)
  • 2 large eggs
  • 2 teaspoons peppermint extract ((can be substituted with vanilla extract))
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2½ cups all purpose flour
  • ½ teaspoon salt
  • 1 cup candy sprinkles
  • 1 cup mini chocolate chips

Instruction

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  • In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy.
  • Add the eggs and beat into the mixture.
  • Next, beat in the peppermint extract.
  • Add the flour, baking soda, baking powder, and salt. On low speed, beat the dry ingredients into the butter and egg mixture.
  • Next, stir in 1/2 cup of the candy sprinkles and all of the mini chocolate chips.
  • Use a small cookie scoop to portion the cookie dough into 1 1/2 tablespoon sized mounds. Gently roll the tops of the cookie dough mounds into the remaining sprinkles.
  • Place onto the prepared baking sheet and bake for exactly 15 minutes. Remove the cookies from the oven and allow to cool for a few minutes before transferring to a wire cooling rack to finish cooling.
