- 1/4 cup pitted kalamata olives
- 1 teaspoon dried oregano
- 1/2 teaspoon dried red pepper flakes
- 2 teaspoons balsamic vinegar
- 1 1/2 eggplant (about 1 pound each)
- 3 large eggs
- 6 tablespoons Basil Pesto
- 1/2 cup all-purpose flour
- 1/4 cup cornflour
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2 cups shredded mozzarella cheese, (divided)
- 1 cup Parmesan cheese
- 1/2 cup Panko breadcrumbs
- 1 teaspoon dried oregano
- 1 tablespoon olive oil
