  • 2 Eggplant, sliced thin (I leave the skins on)

  • 1/2 c . Milk
  • Canola Oil, for frying
  • 4 c. Part Skim Finely Shredded Mozzarella Cheese
  • 3 c. Prepared Marinara Sauce
  • 1 tbsp. EVOO
  • 2- 28(ounce) cans Crushed Tomatoes
  • 3 cloves Garlic, minced
  • 2- 6(ounce) cans Tomato Paste
  • 2 tbsp. Fresh Basil, chopped
  • 2 tbsp. Fresh Parsley, chopped
  • 1/4 c. Pecorino Romano Cheese, grated
  • 28 ounces Water
