Ingredients
The following ingredients have 4 Servings
- 2 1/4 cup all-purpse flour
- 1 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 cup Truvia Baking Blend (or 1 1/4 cup granulated sugar)
- 6 Tbsp. butter
- 3 Tbsp. light vanilla yogurt (I used Yoplait brand)
- 1/2 cup light eggnog
- 1 tsp. vanilla extract
- 2 egg yolks
- ground nutmeg (for sprinkling on top before baking)
- 1 cup powdered sugar
- 2-3 Tbsp. light eggnog
Instruction
- Preheat oven to 300ºF.
- In a medium bowl, combine flour, baking powder, cinnamon, and 1/2 tsp. nutmeg. Mix well and set aside.
- In a large bowl, cream sugar, butter and yogurt with an electric mixer. Add eggnog, vanilla and egg yolks. Beat at a medium speed until smooth.
- Add the flour mixture and beat at low speed just until combined. Careful not to overmix!
- Drop by rounded teaspoons onto cookie sheets that have been lightly sprayed with cooking spray. Sprinkle lightly with nutmeg.
- Bake for 23-25 minutes or until bottoms are lightly browned. Transfer immediately to flat surface and let cool.
- Pour powdered sugar into a small bowl. Add in eggnog one tablespoon at a time until the consistency you like. Drizzle over the tops of the cooled cookies.
- Devour and enjoy!
