Ingredients

The following ingredients have 16 Servings
  • 1/2 cup butter, room temperature
  • 1 cup sugar
  • 1/2 teaspoon nutmeg, plus extra for sprinkling
  • 1 1/2 teaspoons vanilla extract
  • 1 egg
  • 1/4 cup eggnog
  • 1 teaspoon baking soda
  • 2 cups flour

Instruction

  • Line cookie sheets with parchment paper and preheat your oven to 350 degrees.
  • Put the butter, sugar, nutmeg and vanilla extract together in a mixing bowl and beat until nice and fluffy. Add the egg and eggnog and mix again.
  • Whisk the baking soda and flour together, then mix gently into the eggnog mixture.
  • Scoop out roughly tablespoon sized scoops of dough and pop them on the cookie sheet about 2 inches apart.  Sprinkle with a little nutmeg and bake for 10 minutes or until they are starting to turn a little brown around the edges.
  • Cook for a few minutes on the cookie sheets, then move to a cooling rack until they are cool.
