Ingredients
The following ingredients have 4 Servings
- 260 grams Parle G biscuits
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 cup milk
- 2 tablespoons vegetable oil
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 tablespoons chopped mixed nuts (I used almonds, cashew nuts and pistachios)
Instruction
- Preheat the oven to 180 Degrees C. Line a 6-inch cake pan with parchment paper and brush with oil all over.
- Break biscuits into small pieces and add them to a blender or a food processor along with sugar.
- Blend to make a smooth powder.
- Transfer the powder to a medium mixing bowl.
- Add vanilla extract, vegetable oil, and milk and whisk using a wire whisk to make a lump-free batter.
- Keep the batter aside for 10 minutes.
- Whisk well once again.
- Add baking powder and baking soda to the bowl and mix well.
- Pour the batter into the prepared pan.
- Garnish with nuts.
- Keep the pan in the middle rack of the oven and bake for 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Tip – Cover the cake pan with an aluminum foil if the nuts have started to darken in color before the cake has baked properly.
- Remove the cake pan from the oven and transfer the cake to the cooling rack.
- Cool completely and then cut into slices and serve.
