Ingredients

The following ingredients have 4 Servings
  • 260 grams Parle G biscuits
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 tablespoons chopped mixed nuts (I used almonds, cashew nuts and pistachios)

Instruction

  • Preheat the oven to 180 Degrees C. Line a 6-inch cake pan with parchment paper and brush with oil all over.
  • Break biscuits into small pieces and add them to a blender or a food processor along with sugar.
  • Blend to make a smooth powder.
  • Transfer the powder to a medium mixing bowl.
  • Add vanilla extract, vegetable oil, and milk and whisk using a wire whisk to make a lump-free batter.
  • Keep the batter aside for 10 minutes.
  • Whisk well once again.
  • Add baking powder and baking soda to the bowl and mix well.
  • Pour the batter into the prepared pan.
  • Garnish with nuts.
  • Keep the pan in the middle rack of the oven and bake for 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Tip – Cover the cake pan with an aluminum foil if the nuts have started to darken in color before the cake has baked properly.
  • Remove the cake pan from the oven and transfer the cake to the cooling rack.
  • Cool completely and then cut into slices and serve.
