Ingredients

The following ingredients have 4 Servings
  • 8 large hard-boiled eggs, chopped ((Note 1))
  • 2 ripe avocados, chopped ((Note 2))
  • 2/3 cup diced celery (about 3 stalks)
  • 2/3 cup sliced scallions (about 5 scallions)
  • 1/2 cup mayonnaise
  • 2 teaspoons dijon mustard
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon ground cayenne
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon table salt

Instruction

  • Make Dressing: Stir together all dressing ingredients in measuring glass or small bowl until very smooth.
  • Toss Salad: Toss chopped eggs, avocados, celery, scallions, and dressing in large salad bowl until well-mixed. Season with salt and pepper to taste. Cover and refrigerate until chilled. Serve (Note 4) or save for later (Note 5).
