Ingredients

The following ingredients have 4 Servings
  • 6 tortilla shells
  • 6 strips of bacon, chopped
  • 6 large eggs
  • 1/2 cup whole milk
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp diced white onion
  • 1/2 cup salsa of choice
  • 1 avocado, halved and sliced
  • 3 tbsp fresh cilantro, chopped

Instruction

  • Warm tortillas in the microwave for about 15 seconds. Remove, cover, and set aside.
  • In a medium bowl, whisk together eggs, milk, salt , and pepper. Set aside.
  • In a large rimmed skillet, cook the bacon till crisp. Reduce heat to medium-low. Drain all but 1 tbsp of the bacon grease from the pan. Add the eggs to the bacon and allow eggs to cook, but gradually pull in the sides and allow the eggs to set.
  • Once eggs are cooked, place 1/6 of eggs into a tortilla. Top with 1/6 of the following: cheese, onion, salsa, avocado, and cilantro. Serve and enjoy warm.
