Ingredients
The following ingredients have 8 Servings
- 3 cups zucchini (diced)
- 1 green pepper
- 1 red pepper
- 1 cup cherry tomatoes (quartered)
- 1 small eggplant (diced)
- 1 tablespoon dried minced onion (chopped)
- 4 eggs (beaten)
- 1 cup Carbquik or other low carb bake mix
- ½ teaspoon basil
- ½ cup vegetable oil
- ½ cup grated Parmesan cheese
- 1 teaspoon parsley
- dash ground black pepper to taste
Instruction
- Combine all ingredients in large bowl.
- Spread into a greased 12 inch pie pan.
- Bake at 350F for 40-50 minutes or until lightly brown.
