Ingredients

The following ingredients have 5 Servings
  • 1 sweet potato (cubed)
  • 3 red potatoes (cubed)
  • 2 carrots (sliced)
  • 1/2 pound asparagus (sliced into 2-inch pieces)
  • 1 red pepper (sliced into bite-sized pieces)
  • 1 red onion (quartered)
  • 2 garlic cloves (minced)
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon rosemary (fresh, chopped)

Instruction

  • Preheat oven to 425 degrees. Toss all the ingredients in a bowl until everything is coated in olive oil and seasoning. Line a baking sheet or dish with parchment paper and layer everything evenly. Roast for 30 to 45 minutes until everything is cooked through and starting to brown.
