Ingredients

The following ingredients have 4 Servings
  • 1/4 cup vegetable oil
  • 3 eggs, slightly beaten
  • 1 bag (14.4 oz) frozen broccoli stir-fry vegetables
  • 2 cloves garlic, finely chopped
  • 4 cups cooked white rice
  • 1/3 cup soy sauce

Instruction

  • In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Add eggs; cook and stir until eggs are set. Remove to plate; keep warm.
  • In same skillet, heat remaining 3 tablespoons oil over medium-high heat. Add frozen stir-fry vegetables and garlic; cook 4 to 6 minutes, stirring occasionally, until vegetables are heated. Stir in eggs, rice and soy sauce; cook 3 to 4 minutes, stirring occasionally, until thoroughly heated.
